Pavoni made his own improvements to the espresso process, developing an espresso machine that was more practical and reliable for commercial use.   Pavoni patented these improvements and in 1905 he began production of the "Ideale", the first commercially successful espresso cappuccino machine.   The machine was marketed for use in cafes and restaurants around the world.  

La Pavoni gave birth to a new era in coffee and so developed the espresso culture that is ubiquitous throughout the world today.   This cafe culture is reflected strongly in conteperary New Zealand culture, with the words espresso, cafe latte, and cappuccino in everyday use.

In 1961 Pavoni again became a pioneer in the espresso industry, developing one of the first espresso machines for home, the Europiccola.   The Europiccola would go on to become probably one of the most popular and successful home espresso machines. Today's Europiccola Professional remains true to the original machine and is still as popular as ever due to its beautiful styling and ability to produce excellent espresso.
